Homemade Corn Tortillas

A little something inside me dies whenever I purchase store-bought tortillas. Have you ever looked at the ingredients list?! It goes on forever, and I can’t pronounce most of the words. Needless to say, they are full of chemicals and preservatives I’d rather not have in my body. So, I decided to try my hand at making them myself. If you live in Omaha, I highly suggest you check out  Jacobo’s Grocery in South Omaha (24th & L). It is a little Latin grocery store that makes amazing fresh salsa everyday (Michael’s favorite). I purchased my tortilla press there, and you can also buy fresh Masa, which is the dough you use to make these tortillas. If you want to mix the dough yourself like I do, no worries, it only takes a few minutes. I use Maseca, which is basically ground up corn and  can be purchased at any grocery store in the Hispanic section.

Servings: 16 tortillas

What you need:

2 cups Maseca

1/4 tsp salt

1 1/4 cups water

tortilla press OR rolling pin

wax paper (if using tortilla press)

 

1.

Mix all ingredients together in a medium sized bowl until it forms a soft dough. If it feels too dry, add 1 tsp water at a time until you achieve the right consistency. Remember, you are going to be pressing/rolling these out, so if your dough is dry, your tortillas will crumble.

Divide the dough into ping pong sized balls. You should be able to make around 16. If necessary, cover them with a damp cloth to keep moist.

Line your tortilla press with wax paper on both sides. This step is very important, don’t forget the wax paper! (I know this from experience.) If using a rolling pin, use a little Maseca to dust your surface area and rolling pin to avoid sticking.


4.

Press/roll out dough until it reaches about 6 inches in diameter. (Remember, corn tortillas are always smaller than flour!)


5.

Carefully peel off wax paper and place on a pre-heated cast iron skillet on medium-high heat for about 45 seconds on each side. They will cook very quickly, so keep an eye on your pan! Cover with cloth or place in a tortilla warmer to keep warm and soft. Enjoy!

    Your welcome! When your there, go to the deli and ask for the salsa, it is pretty amazing!
